Des gaufres... à la citrouille!



En faisant le ménage du congélateur, je suis tombée sur un reste de purée de citrouille qui criait de se faire cuisiner. Cette recette de gaufres à la citrouille en est le résultat : des gaufres moelleuses, mais croustillantes avec le goût épicé de cette courge.

Vous pouvez utiliser de la purée en conserve ou de la purée maison. Veillez à faire évaporer tout le liquide de la purée en la faisant chauffer dans une poêle avant de l'utiliser.

La recette propose une sauce au fromage à la crème et sirop d'érable (1/2 tasse de fromage à la crème + 1/2 tasse de sirop d'érable mélangés ensemble au fouet), mais je n'ai arrosé que de sirop d'érable.

GAUFRES À LA CITROUILLE
4 à 6 portions (environ 8 gaufres)

1 1/2 tasse de purée de citrouille en conserve ou maison
1 3/4 tasse de farine tout usage
2 c. à thé de poudre à pâte
1 c. à thé de sucre
1/2 c. à thé de sel
1 1/2 tasse de lait
3 oeufs, séparés
4 c. à soupe de beurre fondu, refroidi
Huile pour badigeonner sur le gaufrier
1/2 tasse de noisettes ou de noix de Grenoble hachées pour garnir (facultatif; pas mis)

Faire évaporer tout le liquide de la purée de citrouille en la chauffant dans une poêle.

Combiner les ingrédients secs dans un grand bol. Dans une autre bol, battre ensemble le lait et les jaunes d'oeufs. Y verser le beurre fondu et la purée de citrouille.

Badigeonner le gaufrier avec de l'huile et le chauffer. Verser les ingrédients liquides dans les ingrédients secs et mélanger. Battre les blancs d'oeufs jusqu'à la formation de pics mous (au batteur électrique ou au fouet). Plier délicatement les blancs dans la pâte.

Étendre une louche de pâte dans le gaufrier. Servir en accompagnant de sirop d'érable, de la sauce fromage-sirop (voir plus haut) et de noix (si désiré).
